Spicy Tomatillo Marinated Fish Tacos

Elevate classic Mexican tacos by simply marinating your favorite fish or meat in our Tomatillo and Jalapeño savory jam!

Serving Size: 4-5 tacos

2 Haddock fillets (approx. 1lb)

4-5 flour tortillas

Sweet corn sliced from one cob

Veggies: 6-7 cherry tomatoes, sliced, ½ red onion, sliced, 1 avocado, diced

4 Tbsp Mexican cotija cheese (or feta)

3 Tbsp sour cream

Cilantro, chopped (optional)

Dash of lime juice

2 Tbsp of unsalted butter at room temperature

Instructions

MAKING THE FISH TACOS: Spread Blake Hill’s Tomatillo & Jalapeno Savory Jam over fish fillets, marinate 10 minutes (or overnight in refrigerator)

Preheat skillet on medium-high, add dash of olive oil, and grill fish for 5-7 minutes on each side until golden brown

Remove fish from skillet and break into smaller pieces

Clean skillet and melt butter over medium heat

Add tortillas to skillet one at a time, cooking until golden on each side

In a separate bowl, create tomato salad by mixing together the fruits, vegetables and cheese

In a separate bowl, create “crema” by combining sour cream and lime juice

ASSEMBLING THE FISH TACOS: Place a cooked tortilla on a plate and top with spicy tomatillo fish

Add 2 Tbsp of the tomato salad

Add 1 tsp of the crema

Add 1-2 tsp of Tomatillo & Jalapeno Savory Jam

Top with chopped cilantro and Enjoy!
