A summertime salad celebrating citrus and strawberries - super easy to put together!
Serving Size: Serves 4
Fresh spinach (approximately 12oz)
4 mandarin oranges, peeled and segmented
1 red onion, thinly sliced
1 avocado, cubed
2 ounces crumbled goat cheese (we used Vermont Creamery)
2 ounces chopped pecans (optional)
2 Tbsp olive oil
2 Tbsp balsamic vinegar
Blake Hill’s Naked Strawberry Jam
Whisk together 4 Tbsp of Blake Hill’s Naked Strawberry Jam, olive oil and balsamic vinegar until mixture emulsifies
Season to taste with salt and black pepper
In a salad bowl, add spinach, mandarins, red onion, avocado, goat cheese and pecans
Dress salad with the Strawberry Balsamic vinaigrette, serve and Enjoy!
