Gluten Free Orange Oat Scones

My husband loves scones, so I was making some for breakfast and thought about how delicious it might be to incorporate your marmalade. These scones are rich with orange flavor and spice in every bite, with a delicious jammy glaze on top. You will never know they are gluten-free!”

Serving Size: 8 scones

1 1/2 cups gluten free all-purpose flour (we used King Arthur Baking Gluten-Free All-Purpose Flour)

1 1/4 cups gluten free old fashioned rolled oats

1 tablespoon baking powder

1/2 teaspoon kosher salt

1/2 teaspoon xanthan gum - optional

1/4 cup sugar

1/2 teaspoon cinnamon

1/4 teaspoon freshly grated nutmeg

zest of 1 large orange

1/2 cup butter or non-soy vegan butter

1/3 cup almond milk

1 teaspoon apple cider vinegar

1 large egg

1 tablespoon Blake’s Hill Orange & Bourbon Marmalade

Glaze- 1 tablespoon brown sugar; 2 tablespoon almond milk; 1 teaspoon Blake’s Hill Orange & Bourbon Marmalade

Preheat your oven to 450 degrees F and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, oats, baking powder, salt, xanthan gum, sugar, cinnamon, nutmeg and orange zest. Set aside.

In a medium bowl, melt the butter in the microwave for about 45 seconds then whisk in the almond milk, apple cider vinegar, marmalade and egg until combined.

Pour the wet ingredients into the flour mixture and stir just until combined.

Put the dough onto the parchment paper and pat gently with hands into a round disc that measures about 6 inches across and 3/4 of an inch tall. Chill dough in the fridge for 20-30 minutes.

Make the glaze by whisking together brown sugar, almond milk and marmalade.

Remove the dough from the fridge and with a sharp knife, cut the disc of dough into 8 equal wedges.

Gently separate the wedges with a spatula or long knife then brush each wedge with glaze.

Bake for 12 to 15 minutes or until just golden brown on top. Cool for 10 minutes.

Spread with a little butter and marmalade, and Enjoy!
