Spiced Chocolate Rum Cookie Bars

2 cups (250g) King Arthur Measure for Measure Gluten-free flour
1 teaspoon baking powder
½ teaspoon sea salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground ginger
14 tablespoons butter (196g), melted
1 large egg, room temperature. We love to use local eggs from Birdsong Farm.
1 large egg yolk, room temperature
1 tablespoon maple syrup
3 tablespoon Rum
9 - 12 teaspoons Blake Hill Chocolate Spiced Rum Spread

Preheat your oven to 350°F and grease an 8-inch square pan or line it with parchment paper (leave some overhang for easy cookie bar lifting!).

In a bowl, whisk together flour, baking powder, sea salt, cinnamon, nutmeg, and ginger. Set aside.

In a separate bowl, combine melted butter, brown sugar, and rum. Add the egg, egg yolk, and maple syrup until combined.

Pour your wet ingredients into the dry mix, and stir until smooth and thick.

Spread the batter evenly into your pan. The batter will be thick.

Slightly heat up your Chocolate Spiced Rum Spread until it is a little runny. This will help you with the swirling pattern we are about to do.

Place teaspoon sized dots of the spiced rum chocolate spread in uniform rows on top of your batter.

Now here comes the fun part, with a toothpick or butter knife, swirl the chocolate spread into the batter. There’s no formula here, get as swirly as you would like.

Bake for 30-35 minutes. You’re looking for a toothpick with just a few moist crumbs. Get ready for your kitchen to smell like a holiday Hallmark movie.
