Watermelon, Feta & Mint Salad

Summer in a bowl! This super light, easy to make, minty, gluten free salad is the perfect edition to any BBQ.

1 large watermelon

2 english cucumbers

4 ounces Maplebrook Farm feta cheese

1 lime

salt and pepper to taste

Fresh mint for garnish

1 tablespoon Blake Hill’s Wild Mint Shrub

Instructions

Cut watermelon, cucumbers and feta into cubes, we cut our watermelon into 1 inch cubes and our cucumbers and feta into half inch cubes.

In a large serving bowl add the watermelon, cucumber, feta, and Wild Mint Shrub.

Cut lime in half and juice each half over the salad then season with salt and pepper. Stir to combine, serve chilled and Enjoy!
