Holiday Mince Pie Newtons
A special twist on the traditional mince pie, these all-fruit Mince Pie Newtons are a delicious new way to celebrate the holidays! We have created a gourmet Fig Newton where the buttery soft dough is filled with figs, raisins, apricots, dates, orange zest and cointreau - all from a jar of Blake Hill Holiday Mince Pie filling!
Serving Size: Around 30 individual Newtons
10 1/2 ounces all purpose flour
5 ounces unsalted butter, soft
5 ounces light brown sugar
3 large egg yolks
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Blake Hill's Luxury Fruit Mince Pie Filling
Instructions

Mix butter, brown sugar, baking soda, salt and cinnamon at medium speed in standing mixer until creamy and light, approx. 4 - 5 minutes

Gradually add egg yolks to the mix, then reduce speed and slowly add flour, continuing to blend until well combined

Form a round ball of the mixture by kneading against the blender bowl, then wrap in plastic and refrigerate for an hour until cool and firm

Pre-heat oven to 350F and line cookie sheet with parchment paper

Remove dough from refrigerator, sprinkle countertop with flour, and gradually roll out to 15 inch square and then cut into five 3 inch strips

Pipe Blake Hill's Mince Pie Filling down the center 1 inch of each strip, fold long edges over to close dough over the jam, then roll sealed strip over so seam underneath, gently flatten the long "pie", and transfer onto cookie sheet

Repeat for the other three strips of dough, and then place cookie sheet onto oven's center rack and bake until firm and golden, 15 - 18 minutes

Remove from oven, cut into 1 inch lengths, then transfer your Newtons into airtight container with paper towel between layers and seal. Let Newtons steam and cool for 4+ hours to help them stay moist and "cakey"

When ready to serve, open container, place your Mince Pie Newtons on serving dish and Enjoy!
