Comprised mostly of white meat, this delicate bird is tender and juicy with our fruity, lightly spiced jam glaze. We love this with roast carrots and a classic rice pilaf!
Serving Size: 2 medium cornish hens
Two 1 to 1 ¼ lb cornish hens
1 Tbsp dijon mustard (optional)
Blake Hill’s Peach Ginger Preserve
Preheat oven to 375°F
Combine dijon mustard and 4 Tbsp Blake Hill’s Peach Ginger Preserve in a small bowl
Place 1 Tbsp Peach Ginger Mustard inside cavity of each cornish hen, place hens in a roasting pan, and roast for 40 minutes
Baste hens evenly with remaining Peach Ginger Mustard and roast an additional 20 minutes until hens are golden and have an internal temperature of least 165°F
Remove hens from the oven, season with salt and black pepper, let them rest for 10 minutes, slice, serve and Enjoy!
