Tangy Peach Nut Butter Energy Bites
Crafted by Kent, co-founder of Mixed Up Nut Butter, a Vermont based company, these tangy energy bites are jam-packed with protein, healthy fats and pure fruit. Perfect fuel for a day on the slopes, an epic cross country adventure, or a day in the mountains!
Serving Size: About 2 dozen bites, or 6-8 bars
1 cup old-fashioned rolled oats
¼ cup coconut flakes
¼ cup sunflower seeds, or other seed or nut
¼ cup golden raisins, or other dried fruit
¼ tsp vanilla extract
½ tsp cinnamon
Zest of 1 lemon
Pinch of salt
½ cup Mixed Up Nut Butter's “The New Favorite” (Almond, Cashew, Pecan Nut Butter)
¼ cup plus 2 tablespoons Blake Hill’s Naked Peach Jam

In the bowl of a food processor, add all ingredients except for nut butter and jam. Pulse until combined and contents are in smaller pieces. Add nut butter and jam. Pulse a few times, then mix thoroughly using a spoon.

For bites, roll into heaped tablespoon-sized balls. Store in fridge for up to 1 week, or store in freezer for up to 3 months and Enjoy!

For baked bars, preheat oven to 350F and press into a parchment-lined loaf pan. Bake for 20 minutes, or until edges are browned and center has a “dry” look to it. Cool for 10 minutes, remove from pan, then carefully slice into 6-8 bars.

Lower oven temperature to 325F. Bake bars on a parchment-lined baking sheet until edges are slightly browned, checking after 10 minutes. Cool bars on a wire rack. They will firm up as they cool. Store in an airtight container at room temperature for up to 5 days or up to 3 months in the freezer and Enjoy!
