Spinach Crêpes with Naked Strawberry & Feta
A sweet and savory delight with no added sugar!
Serving Size: 6-8 large crepes
2 large eggs
1 cup all-purpose flour
1 cup whole milk
3 Tbsp melted butter
3-4 Tbsp butter at room temperature
Handful of fresh spinach, patted dry after washing
8 ounces Feta cheese
Blake Hill's Naked Strawberry Jam
In a blender, add eggs, milk, flour, and blend for 30 seconds. Add melted butter and repeat the process. Finally, add the spinach and process until all the leaves are crushed and the batter looks smooth and green
In a large sauté or frying pan, warm 1 Tbsp butter on medium heat (1 Tbsp per crepe), then pour a ladle of crêpe batter into the pan, tilting around until batter spreads evenly. Cook 3 minutes on one side, flip crêpe, and cook another 3 minutes
Remove crêpe from heat, plate, add feta cheese and drizzle your desired amount of Blake Hill’s Naked Strawberry Jam
Fold crêpe in half, then in half again and finish with a final drizzle of Naked Strawberry Jam for extra flavor and Enjoy!
