Holiday Apple Spice Cake with Cranberry Jam
We are convinced that A to Z Cakes are magical. Their whimsical and one of a kind creations have captured our hearts and are now filled with jam! These Apple Spice Cakes are filled with our Cranberry Maple Medley Jam and topped with a mascarpone whipped cream. To be extra fancy they decorated the cakes with Vanilla Macarons filled with Vanilla Buttercream and Jam, plus white chocolate fans and globes.
CAKE: 2 cups sugar
1 cup vegetable oil
4 eggs
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 teaspoons cinnamon
2 cups flour
2 cups of organic unsweetened applesauce
TOPPING: 8oz. Mascarpone
2 cups heavy cream
2/3 cup sugar
Pinch of salt
2 teaspoons vanilla
