Holiday Apple Spice Cake

We are convinced that A to Z Cakes are magical. Their whimsical and one of a kind creations have captured our hearts and are now filled with jam! These Apple Spice Cakes are filled with our Special Edition Holiday Jam and topped with a mascarpone whipped cream. To be extra fancy they decorated the cakes with Vanilla Macarons filled with Vanilla Buttercream and Holiday Jam, plus white chocolate fans and globes.

Serving Size: 1 - 3 tiered 8" cake (or 1 - 2 tiered 9" cake)

CAKE: 2 cups sugar

1 cup vegetable oil

4 eggs

2 teaspoons baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3 teaspoons cinnamon

2 cups flour

2 cups of organic unsweetened applesauce

TOPPING: 8oz. Mascarpone

2 cups heavy cream

2/3 cup sugar

Pinch of salt

2 teaspoons vanilla

Blake Hill’s Special Edition Holiday Jam



Preheat oven to 325 degrees F and grease cake pans


Mix together sugar, vegetable oil and eggs


Combine dry ingredients in a separate bowl


Combine wet & dry ingredients while alternating in the applesauce


Divide the batter between cake tins and bake for 20-30 minutes


Remove from the oven, let cakes cool for 5 minutes and transfer to the cooling rack. Rest for 20 minutes and plate one of the cakes


To make the mascarpone whip, mix ingredients on low until incorporated and then on high until stiff peaks form


Spread whip on cake and spoon Holiday Jam over the whip, then place the other cake on top


Finish decorating your cake with whip, slice and Enjoy!
