Peach Basil Hamantaschen
Hamantaschen are triangular pastries associated with the Jewish holiday of Purim. We have teamed up with Umpleby’s Bakery & Cafe in Hanover, NH to create this jammy cookie that is rich in history!
6 ounces room temp butter
5 ¼ ounces sugar
¾ tsp salt
2 Tbsp grated lemon zest
1 tsp vanilla extract
2 Tbsp chopped basil
11 ½ ounces all purpose flour
3 Tbsp cornstarch
2 tsp baking powder
2 eggs

Instructions

Preheat oven to 350F degrees

Cream butter, sugar, and salt until light and fluffy. Slowly add the remaining ingredients and mix until combined thoroughly. Dough will be on the stiff side.

Wrap and let rest in fridge for at least an hour for best results.

Roll to about ¼ inch thickness and cut with a 3/12-inch circular cutter.

Fill with a generous tablespoon of jam and shape to make the traditional 3-point hat.

Bake on a sheet tray, lined with parchment, approximately 12- 15 minutes, let cool and Enjoy!
