Classic roast chicken that tastes like a barbecue! Super moist, packed with flavor, deliciously smokey and spicy. We love this during summertime served with potato salad and cherry tomatoes, or in the depths of winter with roasted root veggies.
3 - 4 lb chicken (giblets removed), preferably organic
2 Tbsp olive oil
Salt, to taste

Preheat oven to 400°F

Place 2 Tbsp Blake Hill’s Chipotle & Maple Chili Jam inside the cavity of your chicken then place in a roasting pan

Pour olive oil into a bowl and mix with 2 Tbsp Chipotle & Maple Jam. Using approximately half the liquid - baste the chicken, including pouring some of the liquid in the hard-to-reach joints of the chicken

Cover chicken loosely with aluminum foil and roast for 30 minutes. Remove the foil and roast for another 30 minutes, then baste again with remaining liquid and roast a final 20-30 minutes until chicken is thoroughly cooked and the internal temperature reads at least 165°F

Remove chicken from the oven, let it rest for 10 minutes, slice, serve and Enjoy!
