Sweet and Spicy Jammy Meatballs
Super easy appetizer combining Black Currant with Wild Mint botanical jam and spicy jam that will have everyone begging for the recipe!
1½ pounds ground beef
½ pound ground pork
3 cloves minced garlic
Salt and pepper to taste
2 eggs
¼ cup water
1¼ cups grated Pecorino Romano cheese
1/2 cup plain breadcrumbs
2 cups vegetable oil for frying (optional)
1 Cup Tomato Ketchup
2 Tablespoon Fresh Lemon Juice
2 Tablespoon Worcestershire (or to taste)
¼ cup prepared horseradish
1 Jar Black Currant with Wild Mint Jam
Add ½ of Jar Fresno & Thai OR Chipotle Maple for spice!
Instructions

Preheat Oven to 350 degrees

In a large bowl, combine the ground meats

Mince clove garlic and add to meat mixture while creating a bowl shape with the mixture

Add, salt, pepper and eggs and lastly water

Sprinkle cheese then bread crumbs over the water

Begin mixing from the outside pulling the meat over the mix of ingredients and rotate the bowl as you mix

TIP: Sprinkle more breadcrumbs in the mixture if too wet and not binding when forming with hands - do not make it dry

Once ingredients are all combined - choose your size! Larger meatballs should be pan fried before baking to ensure cooked through without drying them out

Bake for 25 to 30 minutes and while they are baking make your Jam Sauce

TO MAKE THE SAUCE: Combine all ingredients in a mix bowl and whisk together. Add more of any ingredient for desired sweet or spiciness, you can never go wrong with more jam.

If serving immediately - mix ingredients in saucepan and bring to a simmer

Remove Meatballs from oven and let rest for 2-3 minutes

SERVING IN CROCKPOT: Using tongs transfer meatballs to a crockpot on low for 1 hour coat with sauce to desired sauciness then move to ‘Warm’ for the remainder of serving

SERVING IMMEDIATELY: Using tongs, transfer meatballs to a larger mixing bowl - add sauce to achieve desired sauciness and plate on their own or with Basmati rice and crispy green beans. Enjoy!

TIP: Double the sauce if you are serving in a crockpot to ensure they are super saucey and do not dry out
