Blake Hill Mango Habanero Spicy Jam

1/4 cup butter

1/2 tsp. dried rosemary

1/2 tsp. garlic powder

Kosher salt

Freshly ground black pepper

15 carrots (2 lbs.), peeled and halved lengthwise

Fresh thyme, for garnish (optional)

Instructions

Preheat the oven to 400ºF. In a small saucepan over low heat, melt the butter. Stir in the jam, rosemary, and garlic powder, then season with salt and pepper.

Spread the carrots out on a large baking sheet. Drizzle with the glaze and toss until evenly coated.
