Mango Pineapple Habanero Breakfast Burrito

Thanks be to the burrito for bringing together fresh and delicious ingredients into one handheld meal. Featuring tropical fruit flavors, habanero chili pepper heat, and the harmonious pairing of scrambled eggs and cheddar cheese, this burrito will be on your regular meal rotation. We especially like to eat this burrito for breakfast once the garden has been weeded, for lunch after a spontaneous kayaking excursion, or for dinner after a long day of work, shuttling kids, and dog walking duty.

Blake Hill Mango Pineapple Habanero Chili Jam

bell peppers, chopped and sauteed

eggs

sausage, optional

cheddar cheese

lavash bread

microgreens

salsa

Instructions

Chop and saute bell peppers, scramble two eggs and heat sausage in separate skillets.

Build the burrito: Lay the lavash bread flat on a plate, place sausage, scrambled eggs, and bell peppers on the lavash, then top with cheese.

Add a couple of spoonfuls of Mango Pineapple Habanero Chili Jam on top of cheese.

We then added our Mango Pineapple Habanero Salsa (see recipe below).

Finally, top with microgreens, roll up the lavash bread carefully so as not to tear it and Enjoy!
