Fennel Arugula Salad with Peach Ginger Preserve

A bright summertime salad with a perfect combination of sweet fruity tastes, a slight peppery bite, and the perfect crunch!  Delicious enjoyed on its own, and also a perfect accompaniment for our Cast Iron Peach Glazed Chicken!

Serving Size: Serves 4

2 fennel bulbs, thinly sliced

2 medium endives, sliced into narrow strips

4 cups young arugula leaves

4 Tbsp olive oil

1 Tbsp white balsamic vinegar

Instructions

Whisk together ⅓ jar Blake Hill’s Peach Ginger Preserve, olive oil, white balsamic vinegar, and season to taste with salt and black pepper

Put sliced fennel, endives and arugula into a large salad bowl and dress with the peach ginger vinaigrette
