Nut Butter and Jam Quick Bread

This recipe collaboration is brought to us by Mixed Up Foods! Our Cranberry Medley with Maple Jam is the perfect pair to their Maple Bliss Nut Butter to create a super flavorful, lovely textured, moist quick bread.

Serving Size: 1 9x5 loaf

1 ½ cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup light brown sugar

1/2 cup Mixed Up Foods’ “Maple Bliss” Nut Butter (Maple Walnut Pecan Butter)

1/2 cup milk of choice

1/4 cup olive oil

1 large egg

1 teaspoon vanilla extract

1/2 cup Blake Hill Cranberry Medley Jam

Optional Garnish: 1/3 cup sliced almonds

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.

In another bowl, whisk the maple nut butter, milk, oil, egg, and vanilla extract until smooth. Be careful not to over mix; a few lumps are okay.

Layer the batter and jam. Pour half of the batter into the prepared loaf pan. Spoon dots of half the jam into the batter. With a butter knife, gently swirl the jam. Add the remaining batter on top, and repeat the jam-swirling process.

Optional: Create garnish. In a small bowl, toss almonds with a tablespoon of sugar and a pinch of salt. Sprinkle evenly over top of batter.

On center rack bake for 45-55 minutes on or until a toothpick inserted into the center comes out clean. The top should be golden brown.

Allow the bread to cool in the pan for 5-10 minutes before transferring it to a wire rack to cool completely, at least 1 hour.

Slice and serve at room temperature. This bread pairs wonderfully with more nut butter or additional jam!

Tips: Store the bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Experiment with different nut butters and jams to create unique flavors!
